Wine-making process: grapes are pressed and fermented in wine-maker tanks at a temperature of 26° C, remontages and delestages are continuous for 15 days. Wine is separated from marcs and put in cement tanks for the malolactic fermentation.
Refinement: After malolactic fermentation, wine matures in cement tanks for at least 6 months, 30% wine is left in 20hl wooden barrels, then it is mixed together and bottled.
Ageing status: Ready for consumption
Taste and smell: taste reminds blackberries, sour black cherries, and ripen plum accompanied with pepper and licorice notes which sweeten the smell. Has strong body with good alcoholic level and sweetness. The remarkable tannic component makes it very persistent.
Matching: ideal for white and red meat, game. Excellent with cheese.
To be served at: 17 – 18 °C.
