Harvesting period : mid-September
Wine-making process: Hand harvesting, wine-pressing and maceration for 6 hours at 15° C, drawing off, gentle pressing and sedimentation for 12 hours. Separation by filtering the cleaned must and fermentation inoculation; then fermentation continues at 15 °C. When fermentation process is completed, wine is filtered.
Refinement: Storage in steel or glass cement tank on “good sediment” up to bottling.
Ageing status: Ready for consumption.
Taste and smell: Pale yellow color with greenish hues, aromatic smell with exotic fruit and garden flowers notes. Decisive, warm and appealing taste. Fresh acid note, remarkable taste.
Matching: Ideal for starters and first dishes based on vegetables, fish dishes and delicate sauces.
To be served at: 17 – 18 °C.
